MIcroorganisms Associated With Starter Cultures Of Traditional Burukutu Liquor In Madakiya, Kaduna State, Nigeria.

Abstract

The microorganisms present in the  starter cultures of burukutu were investigated from 5 production sites at  Madakiya village, Kaduna State, Nigeria. 15 microorganisms were isolated out of  which Lactobacillus fermentum,  Escherichia coli, Rhizopus stolonifer, Mucor pusilus and Saccharomyces cerevisiae were consistent in all the sites.  The determined parameters were alcoholic contents 0.7 + 0 1.8 %, pH 3.5-5.3,  Magnesium 110-115 ppm, Calcium 1.30-1.91ppm and Iron 9.1-11.7 ppm. The  proximate analysis of the starter cultures showed that ash ranged from 4.7 to  5.6%, dry matter from 6.0 to 7.3% and crude protein 4.1 to 4.8 %.
